WINEMAKING DETAILS:
This rosé was made via the Saignée method, in which a portion of macerated red wine juice (concentrated in flavor) was bled off, and then fermented on its own. The fermentation was dry and at low temperatures in order to preserve fresh fruit flavors and amplify production of esters (the chemical compound that is responsible for many fruit aromas), resulting in 0 residual sugar & 0 added sugar. This wine was produced at a Certified CA Sustainable winery.
Pinot Gris
This high-finesse wonder reveals bright aromas of green tea, orange blossom, and vermouth, with a blanket of complex tannins and earth undertones, resulting in a full-bodied mouthfeel and long finish.

Farmed organically (practicing organic, currently in 3-year transition phase required for organic certification)

WINEMAKING DETAILS:
The grapes were de-stemmed and fermented in a closed-top fermenter on the skins using all native yeast. The juice was then macerated on the skins for 10 days prior to pressing. Once pressed off the skins, the wine completed both primary and malolactic fermentation in neutral red, French oak barrels (standard 228 L and 2 large format puncheons).
